- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup milk (or dairy-free alternative)
- 1 large egg
- 1 small onion, finely chopped

Instructions
- Combine cornmeal, gluten-free flour, baking powder, and salt in a mixing bowl.
- Whisk together milk and egg in another bowl.
- Add the wet ingredients to the dry ingredients and mix until just combined. Stir in chopped onion.
- Heat oil in a deep skillet over medium heat. Once hot, drop spoonfuls of the batter into the oil.
- Fry until golden brown, about 2-3 minutes per side.
- Remove and drain on paper towels. Serve hot.
