Description

These soft and fluffy gluten-free cinnamon twist donuts are a delightful sweet treat perfect for breakfast or snacks.

Ingredients

Scale
  • 2 cups gluten-free all-purpose flour (with xanthan gum)
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg, room temperature
  • 3/4 cup milk
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon
  • 6 tablespoons unsalted butter, melted (for coating)

Instructions

  1. Mix the dry ingredients: In a large bowl, whisk together your gluten-free flour, sugar, baking powder, and salt.
  2. Combine the wet ingredients: In a separate bowl, whisk the egg, milk, melted butter, and vanilla until smooth.
  3. Bring it together: Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined. The dough will be soft and a little sticky.
  4. Shape the twists: Turn the dough out onto a lightly floured surface. Gently knead it 3-4 times. Divide the dough into 8 equal pieces. Roll each piece into a rope about 6 inches long, then twist it into a classic doughnut shape, pinching the ends together.
  5. Fry to perfection: Heat about 2 inches of oil in a heavy-bottomed pot to 375°F (190°C). Carefully fry 2-3 doughnuts at a time for 60-90 seconds per side, until golden brown.
  6. Coat and serve: Transfer the hot doughnuts to a paper towel-lined plate. While still warm, brush them with melted butter and dunk them generously in the cinnamon-sugar mixture.

Notes

Serve warm and enjoy with coffee or hot chocolate. They are perfect for breakfast or as an afternoon snack.
