- 2 medium zucchinis, grated
- 1/2 teaspoon salt
- 1/4 cup gluten-free flour
- 1 egg, beaten
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Grate the zucchini and place it in a colander. Sprinkle with salt and let sit for 10 minutes to drain excess water.
- Squeeze the zucchini to remove any remaining liquid.
- In a bowl, mix the zucchini, gluten-free flour, egg, Parmesan cheese, garlic powder, and black pepper.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet and flatten slightly.
- Cook for 3-4 minutes per side until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm.
Notes
- Use a clean kitchen towel to squeeze out excess water from the zucchini.
- Adjust seasoning to taste.
- Serve with yogurt or a dipping sauce if desired.
