Description

Delicious and fun Crispy Chicken Taquitos filled with tender chicken, cheese, and spices, perfect for a quick meal or snack.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup gluten-free tortillas
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1/2 cup diced onions
  • 1/2 cup black beans, rinsed and drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Oil for frying (optional)

Instructions

  1. Mix together the shredded chicken, cheese, onions, black beans, cumin, chili powder, salt, and pepper in a bowl.
  2. Take a gluten-free tortilla and spoon some of the mixture onto one end.
  3. Roll the tortilla tightly around the filling and place it seam-side down.
  4. Repeat with the remaining tortillas and filling.
  5. If frying, heat oil in a skillet over medium heat and fry the taquitos until golden brown and crispy on all sides.
  6. Alternatively, you can bake them in the oven at 400°F (200°C) for about 15-20 minutes until crispy.
  7. Serve warm with your favorite dipping sauce.

Notes

Use leftover rotisserie chicken for a quick filling. Customize your filling with your favorite vegetables or spices. For extra crispiness, spray with cooking spray before baking or frying.
