- 2 cups cooked chicken, shredded
- 1 cup gluten-free tortillas
- 1 cup shredded cheese (like cheddar or mozzarella)
- 1/2 cup diced onions
- 1/2 cup black beans, rinsed and drained
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Oil for frying (optional)
Instructions
- Mix together the shredded chicken, cheese, onions, black beans, cumin, chili powder, salt, and pepper in a bowl.
- Take a gluten-free tortilla and spoon some of the mixture onto one end.
- Roll the tortilla tightly around the filling and place it seam-side down.
- Repeat with the remaining tortillas and filling.
- If frying, heat oil in a skillet over medium heat and fry the taquitos until golden brown and crispy on all sides.
- Alternatively, you can bake them in the oven at 400°F (200°C) for about 15-20 minutes until crispy.
- Serve warm with your favorite dipping sauce.
Notes
Use leftover rotisserie chicken for a quick filling. Customize your filling with your favorite vegetables or spices. For extra crispiness, spray with cooking spray before baking or frying.
