- 4 chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup sun-dried tomatoes
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chicken breasts and season with salt and pepper. Cook until browned and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté until fragrant.
- Pour in the heavy cream, then add the spinach and sun-dried tomatoes, stirring to combine.
- Bring the mixture to a simmer, then stir in the Parmesan cheese until melted and smooth.
- Return the chicken to the skillet and coat with the sauce.
- Cook for an additional 2-3 minutes to warm the chicken through.
- Serve warm, garnished with extra Parmesan if desired.
Notes
For best results, marinate chicken in Italian herbs beforehand. Use fresh spinach for better taste.
