Ingredients
3 medium zucchinis, ends trimmed
2 tbsp butter
2 boneless, skinless chicken breasts, thinly sliced
1 tsp kosher salt (plus more to taste)
1 tsp freshly ground black pepper (plus more to taste)
3 cloves garlic, minced
¾ cup heavy cream (180 mL)
1 cup shredded Parmesan cheese (110 g), plus extra for garnish
2 tbsp fresh parsley, chopped, plus extra for garnish
Instructions
1. Spiralize the zucchinis and pat them dry.
2. Season chicken slices with salt and pepper.
3. Heat butter in skillet and cook chicken until golden. Remove and set aside.
4. Add garlic to the skillet and sauté until fragrant.
5. Pour in heavy cream and simmer over low heat.
6. Stir in Parmesan cheese until sauce is smooth.
7. Add zucchini noodles and toss gently to coat.
8. Return chicken to the skillet and mix everything.
9. Garnish with parsley and extra cheese. Serve warm.
Notes
Salting the zucchini before cooking helps reduce excess moisture.
Use freshly grated Parmesan for best texture and flavor.
