Description
This Zesty Italian Pasta Salad is loaded with pepperoni, salami, fresh veggies, mozzarella pearls, and tossed in a bold homemade dressing. Perfect for parties, picnics, and make-ahead meals.
Ingredients
1 recipe homemade Italian Dressing
1 lb. rotini pasta
3.5–4 oz. pepperoni, quartered (about ¾ cup)
4 oz. sliced salami, quartered (about ¾ cup)
1 pint cherry tomatoes, halved
1 cup black olives, drained and halved
1 orange bell pepper, chopped
1 green bell pepper, chopped
½ cup finely diced red onion
2 tablespoons chopped pepperoncini
8 oz. fresh mozzarella pearls
Parmesan and parsley for garnish
Instructions
1. Prepare the Italian Dressing and refrigerate until ready to use.
2. Cook pasta in salted water; drain and place in a large serving bowl.
3. Toss warm pasta with half the dressing.
4. Add remaining ingredients and mix well.
5. Chill for at least 30 minutes or up to 24 hours.
6. Toss with remaining dressing before serving.
7. Garnish with parsley and Parmesan.
Notes
Make ahead tip: Store salad and dressing separately if prepping a day ahead.
Add more dressing right before serving for the best flavor.
