Ingredients

- 2 large whole wheat tortillas
- 4 eggs
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1/2 cup spinach
- 1/4 cup shredded cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and bell peppers, sauté until softened.
- Add tomatoes and spinach, cook until spinach wilts.
- Whisk eggs, season with salt and pepper, and pour into the pan.
- Stir occasionally until eggs are fully cooked.
- Warm tortillas briefly in a dry pan.
- Spoon the egg and veggie mixture onto tortillas.
- Sprinkle cheese on top.
- Roll tortillas tightly into burritos.
- Serve immediately.
