Description

Ingredients

  • 2 large whole wheat tortillas
  • 4 eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/2 cup spinach
  • 1/4 cup shredded cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and bell peppers, sauté until softened.
  3. Add tomatoes and spinach, cook until spinach wilts.
  4. Whisk eggs, season with salt and pepper, and pour into the pan.
  5. Stir occasionally until eggs are fully cooked.
  6. Warm tortillas briefly in a dry pan.
  7. Spoon the egg and veggie mixture onto tortillas.
  8. Sprinkle cheese on top.
  9. Roll tortillas tightly into burritos.
  10. Serve immediately.
