Description

A hearty vegetable tagine cooked in the traditional Moroccan family style, packed with rich flavors and spices.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • 1 large carrot, sliced
  • 1 medium zucchini, chopped
  • 1 medium eggplant, cubed
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1 cup chickpeas, cooked
  • 1/4 cup dried apricots, chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a tagine or large pot over medium heat.
  2. Add onion, garlic, and ginger. Cook for 3 minutes until softened.
  3. Stir in cumin, coriander, turmeric, and cinnamon. Cook for 1 minute.
  4. Add carrot, zucchini, eggplant, and bell pepper. Cook for 5 minutes.
  5. Pour in diced tomatoes and vegetable broth. Bring to a simmer.
  6. Cover and cook for 25 minutes, stirring occasionally.
  7. Add chickpeas and dried apricots. Simmer for another 10 minutes.
  8. Season with salt and pepper. Garnish with cilantro before serving.
