Delicious vegetable lasagna roll ups filled with spinach, ricotta, and marinara sauce.
Ingredients

- 8 lasagna noodles
- 1 cup ricotta cheese
- 1 cup chopped spinach
- 1/2 cup shredded mozzarella
- 1/4 cup grated Parmesan
- 1 cup marinara sauce
- 1 tsp garlic powder
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Cook lasagna noodles according to package instructions.
- Mix ricotta, spinach, mozzarella, Parmesan, garlic powder, basil, salt, and pepper in a bowl.
- Spread marinara sauce on the bottom of a baking dish.
- Spread the cheese mixture evenly on each noodle.
- Roll up the noodles and place seam-side down in the baking dish.
- Top with remaining marinara sauce and extra mozzarella.
- Bake at 375°F for 20 minutes.
Notes
- Use fresh spinach for better flavor.
- Let noodles cool slightly before rolling.
- Add extra vegetables like mushrooms if desired.
