Description

Delicious vegetable lasagna roll ups filled with spinach, ricotta, and marinara sauce.


Ingredients

  • 8 lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup chopped spinach
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1 cup marinara sauce
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Cook lasagna noodles according to package instructions.
  2. Mix ricotta, spinach, mozzarella, Parmesan, garlic powder, basil, salt, and pepper in a bowl.
  3. Spread marinara sauce on the bottom of a baking dish.
  4. Spread the cheese mixture evenly on each noodle.
  5. Roll up the noodles and place seam-side down in the baking dish.
  6. Top with remaining marinara sauce and extra mozzarella.
  7. Bake at 375°F for 20 minutes.
