Ingredients

- 4 medium potatoes, peeled and cubed
- 1/4 cup vegan mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup finely chopped red onion
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh dill (optional)
Instructions
- Boil the potatoes in salted water until tender, about 10-12 minutes.
- Drain and let them cool slightly.
- In a large bowl, mix vegan mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
- Add the warm potatoes, red onion, parsley, and dill. Gently toss to coat.
- Chill for at least 30 minutes before serving.
Notes
- Adjust salt and pepper to taste.
- Add diced celery or pickles for extra crunch.
