Ingredients

  • 4 medium potatoes, peeled and cubed
  • 1/4 cup vegan mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup finely chopped red onion
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill (optional)

Instructions

  1. Boil the potatoes in salted water until tender, about 10-12 minutes.
  2. Drain and let them cool slightly.
  3. In a large bowl, mix vegan mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
  4. Add the warm potatoes, red onion, parsley, and dill. Gently toss to coat.
