A rich and flavorful vegan mushroom gravy perfect for topping mashed potatoes or other dishes.
Ingredients

- 2 cups mushrooms, sliced
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups vegetable broth
- 1 tbsp soy sauce
- 1/2 tsp thyme
- 1/2 tsp black pepper
- Salt to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and sauté until translucent.
- Add garlic and mushrooms, cook until mushrooms soften.
- Sprinkle flour and stir well to coat.
- Slowly pour in vegetable broth while stirring.
- Add soy sauce, thyme, and black pepper.
- Simmer for 5-7 minutes until thickened.
- Season with salt if needed.
- Serve warm over mashed potatoes.
Notes
- Use tamari instead of soy sauce for a gluten-free option.
- For a creamier texture, blend half the gravy and mix back in.
- Store leftovers in an airtight container for up to 3 days.
