Ingredients

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups vegetable broth
  • 1 tbsp soy sauce
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and sauté until translucent.
  3. Add garlic and mushrooms, cook until mushrooms soften.
  4. Sprinkle flour and stir well to coat.
  5. Slowly pour in vegetable broth while stirring.
  6. Add soy sauce, thyme, and black pepper.
  7. Simmer for 5-7 minutes until thickened.
  8. Season with salt if needed.
  9. Serve warm over mashed potatoes.
