Ingredients

- 1 cup lentils
- 2 cups mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add mushrooms and cook until browned.
- Stir in lentils, cumin, paprika, salt, and pepper.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes until lentils are tender.
- Serve hot.
Notes
- Use brown or green lentils for best texture.
- Add more broth if stew is too thick.
- Store leftovers in the fridge for up to 3 days.
