- 12 lasagna noodles
- 2 cups vegan ricotta cheese
- 3 cups fresh spinach
- 2 cups marinara sauce
- 1 cup shredded vegan mozzarella
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions. Drain and set aside.
- Heat olive oil in a pan. Sauté garlic until fragrant.
- Add spinach and cook until wilted. Season with salt and pepper.
- Mix spinach with vegan ricotta cheese.
- Spread a layer of marinara sauce in a baking dish.
- Place 4 lasagna noodles over the sauce.
- Spread half the ricotta-spinach mixture over the noodles.
- Repeat layers: sauce, noodles, ricotta mixture.
- Top with remaining noodles, sauce, and shredded vegan mozzarella.
- Bake for 25-30 minutes until bubbly and golden.
Notes
- Use no-boil lasagna noodles for quicker prep.
- Add mushrooms for extra flavor.
- Let lasagna rest 10 minutes before serving.
