- 2 lbs Yukon Gold potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1/2 cup unsweetened almond milk
- 1/4 cup olive oil
- 1 tbsp nutritional yeast
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh chives, chopped
Instructions
- Boil potatoes and garlic in salted water for 15-20 minutes until tender.
- Drain and return to the pot.
- Add almond milk, olive oil, nutritional yeast, salt, and pepper.
- Mash until smooth and creamy.
- Garnish with fresh chives before serving.
Notes
- For extra creaminess, use a hand mixer instead of a masher.
