- 1 medium head cauliflower, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp turmeric (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until soft, about 5 minutes.
- Add minced garlic and cook for 1 minute.
- Stir in chopped cauliflower, salt, pepper, and turmeric (if using).
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until cauliflower is tender.
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in coconut milk and adjust seasoning if needed.
- Serve warm.
Notes
- For extra creaminess, add more coconut milk.
- Garnish with fresh herbs or roasted nuts if desired.
