Description

A hearty vegan dish featuring roasted cauliflower steaks topped with a vibrant chimichurri sauce.


Ingredients

  • 1 large head cauliflower
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 2 cloves garlic
  • 2 tbsp red wine vinegar
  • 1/4 cup olive oil
  • 1/4 tsp red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut cauliflower into 1-inch thick steaks.
  3. Brush with olive oil, season with salt and pepper.
  4. Roast for 25 minutes until golden.
  5. Blend parsley, cilantro, garlic, vinegar, 1/4 cup olive oil, and red pepper flakes for chimichurri.
  6. Serve cauliflower steaks topped with chimichurri.
