Ingredients

- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup fresh parsley
- 1/4 cup fresh cilantro
- 2 cloves garlic
- 2 tbsp red wine vinegar
- 1/4 cup olive oil
- 1/4 tsp red pepper flakes
Instructions
- Preheat oven to 400°F (200°C).
- Cut cauliflower into 1-inch thick steaks.
- Brush with olive oil, season with salt and pepper.
- Roast for 25 minutes until golden.
- Blend parsley, cilantro, garlic, vinegar, 1/4 cup olive oil, and red pepper flakes for chimichurri.
- Serve cauliflower steaks topped with chimichurri.
