Ingredients

- 2 cups carrots, chopped
- 2 cups potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1/4 tsp turmeric
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add carrots and potatoes, stir to combine.
- Pour in vegetable broth and season with salt, pepper, cumin, and turmeric.
- Bring to a boil, then reduce heat and simmer for 20 minutes or until vegetables are tender.
- Blend the soup until smooth using an immersion blender or transfer to a blender in batches.
- Serve hot.

- Store leftovers in an airtight container for up to 3 days.
- Garnish with fresh herbs or a drizzle of coconut milk if desired.
