Description

Ingredients

  • 2 cups potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/4 tsp turmeric

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Add carrots and potatoes, stir to combine.
  4. Pour in vegetable broth and season with salt, pepper, cumin, and turmeric.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes or until vegetables are tender.
  6. Blend the soup until smooth using an immersion blender or transfer to a blender in batches.
  7. Serve hot.
