Description

Ingredients

  • 2 cups broccoli, chopped
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp turmeric

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add potatoes and broccoli, stir for 2 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes or until vegetables are tender.
  6. Stir in coconut milk, salt, pepper, and turmeric.
  7. Blend half the soup for a creamy texture.
  8. Serve hot.
