Ingredients

- 2 cups broccoli, chopped
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp turmeric
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add potatoes and broccoli, stir for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes or until vegetables are tender.
- Stir in coconut milk, salt, pepper, and turmeric.
- Blend half the soup for a creamy texture.
- Serve hot.

- Store leftovers in an airtight container for up to 3 days.
- Add more broth if you prefer a thinner soup.
