- 1 1/2 tsp pumpkin pie spice
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 3/4 cup pumpkin puree
- 1 large egg
- 1 tsp vanilla extract
- For the glaze: 4 tbsp unsalted butter, 1 cup powdered sugar, 1 tbsp milk, 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk flour, baking soda, salt, and pumpkin pie spice in a bowl.
- Cream butter and sugars until fluffy. Add pumpkin, egg, and vanilla; mix well.
- Gradually add dry ingredients to wet ingredients. Mix until combined.
- Drop dough by rounded tablespoons onto baking sheets. Bake for 10-12 minutes.
- For the glaze, brown butter in a saucepan. Whisk in powdered sugar, milk, and vanilla.
- Drizzle glaze over cooled cookies.
Notes
- Use pure pumpkin puree, not pumpkin pie filling.
- Cool cookies completely before glazing.
- Store in an airtight container for up to 3 days.
