Ingredients

- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup all-purpose flour
- 1/2 cup milk
- 2 tbsp butter
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
Instructions
- In a large pot, melt butter over medium heat. Add onion, carrots, and celery. Cook until soft.
- Pour in chicken broth and bring to a simmer.
- In a bowl, mix flour, milk, and a pinch of salt to form the dumpling dough.
- Drop spoonfuls of dough into the simmering broth.
- Add shredded chicken and season with salt, pepper, and thyme.
- Cover and cook for 15-20 minutes until dumplings are fluffy and cooked through.
- Serve hot.
Notes
- Use leftover rotisserie chicken for quicker prep.
- Add a splash of cream for a richer broth.
- Store leftovers in the fridge for up to 3 days.
