Ingredients

  • 1 lb turkey breast, diced
  • 1 cup barley
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. Add turkey and cook until browned.
  3. Add onion, carrots, celery, and garlic. Cook for 5 minutes.
  4. Stir in barley, thyme, rosemary, and bay leaf.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and simmer for 45 minutes.
  7. Remove bay leaf and season with salt and pepper.
  8. Serve hot.
