Instructions
- Heat olive oil in a large pot over medium heat.
- Add mixed vegetables and sauté for 5 minutes.
- Stir in vegetable broth, diced tomatoes, garlic powder, and Italian seasoning.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add tortellini and cook according to package instructions.
