Ingredients

- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
- 1 large egg
- 3/4 cup milk
- 1 cup diced fresh tomatoes
- 1/4 cup chopped fresh basil
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, whisk flour, baking powder, salt, and pepper.
- In another bowl, mix olive oil, egg, and milk.
- Combine wet and dry ingredients. Fold in tomatoes and basil.
- Pour batter into the loaf pan. Bake for 45-50 minutes.
- Let it cool before slicing. Serve warm.
Notes
- Use ripe tomatoes for the best flavor.
- Replace fresh basil with 1 tbsp dried basil if needed.
- Store leftovers in an airtight container for up to 3 days.
