- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded mozzarella cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Place chicken breasts in a baking dish.
- In a bowl, mix tomatoes, basil, garlic, olive oil, salt, and pepper.
- Spread the tomato mixture over the chicken.
- Bake for 25 minutes or until chicken reaches 165°F.
- Sprinkle mozzarella cheese on top and bake for 5 more minutes.
- Let rest for 5 minutes before serving.

- Use fresh basil for best flavor.
- Adjust salt and pepper to taste.
- Add red pepper flakes for a spicy kick.
