A simple and flavorful dish featuring teriyaki-glazed salmon served over rice with fresh vegetables.
Ingredients

- 2 salmon fillets (6 oz each)
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1 cup cooked white rice
- 1/2 cup sliced cucumber
- 1/2 cup shredded carrots
- 1 green onion, sliced
- 1 tsp sesame seeds
Instructions
- Preheat oven to 400°F (200°C).
- Mix soy sauce, honey, rice vinegar, ginger, and garlic in a bowl.
- Place salmon fillets in a baking dish and pour half the teriyaki sauce over them.
- Bake for 12-15 minutes until salmon flakes easily.
- Heat remaining sauce in a small pan until thickened.
- Divide rice between two bowls.
- Top with salmon, cucumber, carrots, and green onion.
- Drizzle with thickened sauce and sprinkle sesame seeds.
Notes
- Use fresh salmon for best results.
- Adjust honey for desired sweetness.
- Serve immediately for optimal texture.
