Ingredients

  • 2 salmon fillets (6 oz each)
  • 1/2 cup teriyaki sauce
  • 1 cup cooked white rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup edamame
  • 1 tbsp sesame seeds
  • 1 tbsp chopped green onions

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place salmon fillets on a baking sheet and brush with teriyaki sauce.
  3. Bake for 12-15 minutes until salmon flakes easily.
  4. Divide rice between two bowls.
  5. Top with carrots, cucumbers, and edamame.
  6. Place cooked salmon on top.

  8. Sprinkle with sesame seeds and green onions.
