Ingredients

Scale
  • 2 large sweet potatoes, thinly sliced
  • 2 cups kale, chopped
  • 1 cup low-fat milk
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan and sauté garlic for 1 minute.
  3. Add kale and cook until wilted, about 3 minutes.
  4. Layer sweet potato slices in a baking dish.
  5. Spread kale mixture over the sweet potatoes.
  6. Pour milk evenly over the layers.
  7. Sprinkle Parmesan cheese, salt, and pepper on top.
  8. Bake for 30 minutes or until sweet potatoes are tender.
