Ingredients
Scale
- 2 large sweet potatoes, thinly sliced
- 2 cups kale, chopped
- 1 cup low-fat milk
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan and sauté garlic for 1 minute.
- Add kale and cook until wilted, about 3 minutes.
- Layer sweet potato slices in a baking dish.
- Spread kale mixture over the sweet potatoes.
- Pour milk evenly over the layers.
- Sprinkle Parmesan cheese, salt, and pepper on top.
- Bake for 30 minutes or until sweet potatoes are tender.
Notes
- You can substitute kale with spinach.
- For a creamier texture, use coconut milk.
- Store leftovers in an airtight container for up to 3 days.
