Description
A family-favorite, easy Sweet Hawaiian Crockpot Chicken Recipe featuring juicy chicken breasts, pineapple, soy sauce, ginger, and brown sugar slow cooked to tropical perfection.
Ingredients
4 boneless, skinless chicken breasts (about 2 pounds)
1 cup pineapple juice
1 cup diced pineapple (fresh or canned)
1/2 cup soy sauce
1/4 cup brown sugar
2 cloves garlic, minced
1 teaspoon ground ginger
1/4 teaspoon black pepper
Optional: Sliced green onions, red pepper flakes, bell peppers, fresh cilantro or parsley, sesame seeds (for garnish)
Instructions
1. Place chicken breasts in bottom of slow cooker.
2. Whisk together pineapple juice, diced pineapple, soy sauce, brown sugar, garlic, ginger, and black pepper in a bowl.
3. Pour sauce evenly over the chicken.
4. Layer bell peppers on top if using.
5. Cover and cook on low 5–6 hours or high 2.5–3 hours, until chicken is tender.
6. Remove chicken, shred or slice, and return to crockpot. Stir to coat with sauce, cook 15–20 minutes more.
7. Garnish with green onions, sesame seeds, and herbs. Serve over rice.
Notes
For a thicker sauce, add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water) in the last 30 minutes of cooking.
Chicken thighs can be substituted for extra tenderness.
Store leftovers in fridge up to 4 days or freeze up to 3 months.
Pairs well with Hawaiian macaroni salad or grilled veggies.
