Instructions
- Preheat oven to 375°F (190°C).
- Cut a pocket into each chicken breast.
- Mix ricotta, spinach, garlic, oregano, salt, and pepper in a bowl.
- Stuff the chicken breasts with the ricotta mixture.
- Heat olive oil in an oven-safe skillet over medium heat.
- Sear the chicken for 3-4 minutes per side.
- Transfer skillet to the oven and bake for 15-20 minutes.
