Description
These strawberry scones are flaky, buttery, and filled with fresh berries. Perfect for breakfast, brunch, or a sweet snack.
Ingredients
⅓ cup buttermilk
1 large egg, slightly beaten
2 cups all-purpose flour, plus extra for working with dough
3 tablespoons granulated sugar
2 teaspoons baking powder
¾ teaspoon fine sea salt
6 tablespoons cold unsalted butter, cubed
½ cup chopped strawberries
Optional Glaze:
1 ¼ cup powdered sugar
2 tablespoons lemon juice (or milk)
Instructions
1. Whisk together buttermilk and egg, set aside.
2. In stand mixer, combine flour, sugar, baking powder, and salt.
3. Add cold butter, mix until pea-sized crumbs form.
4. Drizzle in egg mixture until dough forms. Fold in strawberries.
5. Turn onto floured surface, shape into 1” round. Wrap and chill for 1–2 hours.
6. Preheat oven to 400°F, line a baking sheet.
7. Cut dough into 8 wedges, bake 15–18 minutes until golden.
8. Cool on rack before glazing.
9. Mix powdered sugar with lemon juice for glaze. Drizzle over cooled scones.
Notes
Don’t overwork the dough.
Chill before baking for flaky texture.
Use fresh strawberries for best flavor.
