Description

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1 large egg
  • 1 cup milk
  • 1/4 cup olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, baking powder, salt, pepper, garlic powder, and onion powder.
  3. Stir in chopped spinach and feta cheese.
  4. In another bowl, beat the egg, then add milk and olive oil. Mix well.
  5. Pour the wet ingredients into the dry ingredients. Stir until just combined.
  6. Divide the batter evenly into the muffin tin, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool for 5 minutes before serving.

Notes

  • You can substitute fresh spinach with thawed frozen spinach (squeeze out excess water).
  • For extra flavor, add a pinch of dried oregano or basil.
