- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix spinach, feta cheese, garlic, oregano, salt, and pepper.
- Cut a pocket into each chicken breast.
- Stuff each breast with the spinach and feta mixture.
- Secure with toothpicks if needed.
- Heat olive oil in a skillet over medium heat.
- Sear chicken for 2-3 minutes per side until golden.
- Transfer to a baking dish and bake for 20-25 minutes or until fully cooked.
Notes
- Use toothpicks to keep the stuffing inside while baking.
- Check chicken temperature—it should reach 165°F (74°C).
- Serve with a side of roasted vegetables or rice.
