Description

A hearty and flavorful dish featuring jumbo pasta shells stuffed with a spicy pumpkin and Italian sausage filling, baked to perfection.


Ingredients

  • 12 oz jumbo pasta shells
  • 1 lb Italian sausage, casings removed
  • 1 cup pumpkin puree
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp red pepper flakes
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta shells according to package instructions until al dente. Drain and set aside.
  3. Brown Italian sausage in a skillet over medium heat, breaking it into small pieces. Drain excess fat.
  4. In a bowl, combine cooked sausage, pumpkin puree, ricotta, Parmesan, red pepper flakes, oregano, garlic powder, salt, and black pepper.
  5. Spread marinara sauce in the bottom of a baking dish.
  6. Fill each pasta shell with the sausage-pumpkin mixture and arrange in the baking dish.
  7. Sprinkle mozzarella cheese over the stuffed shells.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly.
  9. Garnish with fresh parsley before serving.

Notes

  • For a vegetarian version, substitute Italian sausage with mushrooms.
  • Adjust red pepper flakes to control the spice level.
  • Leftovers can be refrigerated for up to 3 days.
