Ingredients

- 1 can (15 oz) black beans, drained and rinsed
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper
- Salt to taste
- 8 small corn tortillas
- 1 avocado
- 1/4 cup sour cream
- 1 tbsp lime juice
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and cook until soft, about 3 minutes.
- Stir in garlic, cumin, chili powder, cayenne, and salt. Cook for 1 minute.
- Add black beans and cook for 5 minutes, mashing slightly.
- Warm tortillas in a dry pan or microwave.
- Blend avocado, sour cream, and lime juice until smooth.
- Fill tortillas with bean mixture and top with avocado crema.
- Garnish with cilantro and serve.
Notes
- Adjust spice level by reducing cayenne.
- Use flour tortillas if preferred.
- Store leftovers in an airtight container for up to 2 days.
