- 1 1/2 cups apple cider
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- For the cinnamon sugar crust: 1/4 cup melted butter, 1/2 cup granulated sugar, 1 tbsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Simmer apple cider in a saucepan until reduced to 1/2 cup. Let cool.
- Whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves in a bowl.
- Cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
- Alternately add dry ingredients and buttermilk to the batter, beginning and ending with flour mixture. Stir in reduced apple cider.
- Pour batter into prepared pan. Bake for 45-50 minutes or until a toothpick comes out clean.
- Cool for 10 minutes. Brush top with melted butter, then coat with cinnamon sugar mixture.
- Let cool completely before slicing.
Notes
- Reducing the apple cider intensifies the flavor.
- For extra moisture, brush the loaf with more melted butter after cooling.
- Store leftovers in an airtight container for up to 3 days.
