Description

Spiced Apple Cider Donut Loaf with a Cinnamon Sugar Crust combines the warm flavors of apple cider and cinnamon in a soft, baked loaf coated with a sweet cinnamon sugar topping.


Ingredients

  • 1 1/2 cups apple cider
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • For the cinnamon sugar crust: 1/4 cup melted butter, 1/2 cup granulated sugar, 1 tbsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Simmer apple cider in a saucepan until reduced to 1/2 cup. Let cool.
  3. Whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves in a bowl.
  4. Cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
  5. Alternately add dry ingredients and buttermilk to the batter, beginning and ending with flour mixture. Stir in reduced apple cider.
  6. Pour batter into prepared pan. Bake for 45-50 minutes or until a toothpick comes out clean.
  7. Cool for 10 minutes. Brush top with melted butter, then coat with cinnamon sugar mixture.
  8. Let cool completely before slicing.

  • Reducing the apple cider intensifies the flavor.
  • For extra moisture, brush the loaf with more melted butter after cooling.
