Description
Savory Southern Tomato Pie made with ripe tomatoes, a creamy cheese-herb topping, and a flaky golden crust. Perfect for summer meals.
Ingredients
4–5 ripe heirloom or beefsteak tomatoes
1 9-inch pie crust
1 1/2 cups shredded sharp cheddar cheese
1/2 cup mayonnaise
1 tbsp Dijon mustard
1/4 cup chopped fresh basil
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F. Par-bake crust for 10 minutes.
2. Slice tomatoes, salt them, and let drain on paper towels for 15–20 minutes.
3. In a bowl, mix cheese, mayo, mustard, basil, salt, and pepper.
4. Layer tomatoes in crust. Spread cheese mixture on top.
5. Bake for 30–35 minutes until bubbly and golden.
6. Cool 10 minutes before slicing. Serve warm or at room temperature.
Notes
To avoid soggy crust, always salt and drain your tomatoes.
You can use a mix of mozzarella and cheddar for a twist.
Great to serve cold with salad or hot with Southern sides.
