Description
A classic Southern Peach Crumb Cake made with juicy peaches, a tender sour cream batter, and a buttery cinnamon crumb topping.
Ingredients
1–1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup sugar
1 stick (1/2 cup) butter, softened
2 tsp vanilla extract
2 eggs
1 cup sour cream
4 fresh peaches sliced (or 1 15-ounce can, drained)
1 cup light brown sugar
1 cup all-purpose flour (for topping)
2 tsp cinnamon
1/8 tsp salt (for topping)
1/2 cup butter, melted
Instructions
1. Preheat oven to 350°F and grease a 9-inch round baking pan.
2. Sift together flour, baking soda, baking powder, and salt.
3. Cream together butter and sugar until light and fluffy.
4. Add vanilla and eggs one at a time, beating well.
5. Fold in dry ingredients and sour cream alternately until combined.
6. Spread batter into prepared pan and layer peaches on top.
7. Combine brown sugar, flour, cinnamon, and salt in a bowl.
8. Add melted butter and mix until clumpy.
9. Sprinkle topping over peaches evenly.
10. Bake for 45–55 minutes until a toothpick comes out clean.
11. Cool on a wire rack before slicing and serving.
Notes
You can use canned peaches for convenience—just drain them well.
Chill the crumb topping before baking to prevent it from sinking.
