- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream butter and sugars until smooth.
- Add pumpkin, egg, and vanilla. Mix well.
- In another bowl, whisk flour, baking soda, salt, and pumpkin pie spice.
- Gradually add dry ingredients to wet ingredients. Stir until combined.
- Fold in chocolate chips.
- Drop tablespoon-sized dough onto a baking sheet.
- Bake for 10-12 minutes until edges are lightly browned.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Use pure pumpkin puree, not pumpkin pie filling.
- Do not overmix the dough to keep cookies soft.
- Store in an airtight container for up to 3 days.
