Description

Soft pumpkin chocolate chip cookies combine the warm flavors of pumpkin spice with sweet chocolate chips for a perfect fall treat.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream butter and sugars until smooth.
  3. Add pumpkin, egg, and vanilla. Mix well.
  4. In another bowl, whisk flour, baking soda, salt, and pumpkin pie spice.
  5. Gradually add dry ingredients to wet ingredients. Stir until combined.
  6. Fold in chocolate chips.
  7. Drop tablespoon-sized dough onto a baking sheet.
  8. Bake for 10-12 minutes until edges are lightly browned.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Use pure pumpkin puree, not pumpkin pie filling.
  • Do not overmix the dough to keep cookies soft.
