Description

Ingredients

  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar
  • ¼ cup brown sugar
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk flour, baking soda, cinnamon, salt, nutmeg, and cloves.
  3. In another bowl, mix pumpkin puree, oil, eggs, granulated sugar, brown sugar, and vanilla.
  4. Combine wet and dry ingredients until just mixed. Do not overmix.
  5. Pour batter into the loaf pan and bake for 55-60 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use fresh or canned pumpkin puree.
  • For extra moisture, add ¼ cup of applesauce.
