- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- 1 cup pumpkin puree
- ½ cup vegetable oil
- 2 large eggs
- 1 cup granulated sugar
- ¼ cup brown sugar
- ½ tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, whisk flour, baking soda, cinnamon, salt, nutmeg, and cloves.
- In another bowl, mix pumpkin puree, oil, eggs, granulated sugar, brown sugar, and vanilla.
- Combine wet and dry ingredients until just mixed. Do not overmix.
- Pour batter into the loaf pan and bake for 55-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use fresh or canned pumpkin puree.
- For extra moisture, add ¼ cup of applesauce.
- Store in an airtight container for up to 3 days.
