A hearty smoky black bean soup packed with flavor and easy to make.
Ingredients

- 2 cups dried black beans, soaked overnight
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lime juice
- Fresh cilantro for garnish
Instructions
- Drain soaked beans and rinse.
- Heat oil in a pot over medium heat. Add onion, garlic, and bell pepper. Cook for 5 minutes.
- Stir in cumin and smoked paprika. Cook for 1 minute.
- Add beans, broth, tomatoes, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 1 hour or until beans are tender.
- Blend half the soup for a thicker texture if desired.
- Stir in lime juice. Garnish with cilantro before serving.
Notes
- Soak beans for at least 8 hours for best results.
- Adjust spices to taste.
- Store leftovers in the fridge for up to 3 days.
