Sweet, tangy, and full of flavor, this Slow Cooker Sweet Chili Chicken is a weeknight dinner winner. Served over rice with bell peppers, it’s cozy comfort in every bite.
Ingredients
2 pounds boneless skinless chicken thighs or breasts
1 cup sweet chili sauce
¼ cup low-sodium soy sauce
2 tablespoons rice vinegar
2 tablespoons honey
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
2 tablespoons cornstarch
2 tablespoons water
Green onions, chopped, for garnish
Sesame seeds, for garnish
Cooked rice, for serving
Instructions
1. Place chicken in the slow cooker.
2. Whisk together sweet chili sauce, soy sauce, rice vinegar, honey, garlic, and ginger. Pour over chicken.
3. Add sliced peppers and onion on top.
4. Cover and cook on low for 5–6 hours or high for 2.5–3 hours.
5. Mix cornstarch and water in a small bowl. Stir into slow cooker 30 minutes before done.
6. Allow sauce to thicken, then serve hot over rice.
7. Garnish with green onions and sesame seeds.
Notes
Use chicken thighs for extra tenderness.
Add pineapple chunks for sweetness.
Serve with coconut rice or in lettuce wraps for variety.
