Ingredients

- 1 lb shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 2 tbsp fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook shrimp in boiling water for 2-3 minutes until pink. Drain and cool.
- In a large bowl, combine shrimp, avocado, cherry tomatoes, and red onion.
- Add cilantro, lime juice, olive oil, salt, and pepper.
- Toss gently to mix.
- Serve chilled.
