Ingredients

- 1 lb Italian sausage (sweet or spicy)
- 2 bell peppers (sliced)
- 1 large onion (sliced)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1/2 tsp garlic powder
Instructions
- Preheat oven to 400°F (200°C).
- Toss peppers and onions with olive oil, salt, pepper, oregano, and garlic powder on a sheet pan.
- Arrange sausages on top of the vegetables.
- Roast for 25-30 minutes, flipping sausages halfway through.
- Serve hot, optionally with crusty bread or rice.

- Add potatoes or zucchini for extra vegetables.
