Description

Easy and delicious sheet pan quesadillas made with minimal effort and maximum flavor.


Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, rinsed
  • 1/2 cup corn kernels
  • 1/4 cup diced red bell pepper
  • 1 tsp taco seasoning
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place two tortillas on a sheet pan.
  3. Sprinkle half the cheese evenly over the tortillas.
  4. Add chicken, black beans, corn, and bell pepper.
  5. Sprinkle remaining cheese and top with the other two tortillas.
  6. Brush the tops lightly with olive oil.
  7. Bake for 10-12 minutes until golden and crispy.
  8. Slice into wedges and serve.
