Description
A hearty salmon corn chowder flavored with fresh dill.

- 1 lb fresh salmon, cubed
- 2 cups corn kernels
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- 2 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions
- Melt butter in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Pour in vegetable broth and bring to a simmer.
- Add salmon and corn, cook for 8-10 minutes.
- Stir in heavy cream and simmer for 5 minutes.
- Season with salt, pepper, and dill.
- Serve warm.
