Ingredients

- 1 large tortilla wrap
- 1/2 cup hummus
- 1 cup mixed roasted vegetables (bell peppers, zucchini, eggplant)
- 1/4 cup baby spinach
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the vegetables in olive oil, salt, and pepper, then roast for 20 minutes.
- Spread hummus evenly over the tortilla.
- Layer the roasted vegetables and baby spinach on top.
- Roll the tortilla tightly and slice in half.
- Serve immediately or wrap for later.
Notes
- Use any vegetables you prefer.
- For extra flavor, add a sprinkle of paprika or cumin.
- Store in the fridge for up to 2 days.
