Description

Ingredients

  • 1 large tortilla wrap
  • 1/2 cup hummus
  • 1 cup mixed roasted vegetables (bell peppers, zucchini, eggplant)
  • 1/4 cup baby spinach
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the vegetables in olive oil, salt, and pepper, then roast for 20 minutes.
  3. Spread hummus evenly over the tortilla.
  4. Layer the roasted vegetables and baby spinach on top.
  5. Roll the tortilla tightly and slice in half.
  6. Serve immediately or wrap for later.
