Ingredients

- 2 lbs ripe tomatoes, halved
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup fresh basil, chopped
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss tomatoes, onion, and garlic with olive oil on a baking sheet.
- Roast for 30 minutes until tomatoes soften.
- Transfer roasted vegetables to a blender.
- Add basil and vegetable broth, blend until smooth.
- Pour mixture into a pot and simmer for 10 minutes.
- Stir in heavy cream, salt, and pepper.
- Serve hot.

- Adjust cream for desired thickness.
