Ingredients

  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup fresh basil, chopped
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss tomatoes, onion, and garlic with olive oil on a baking sheet.
  3. Roast for 30 minutes until tomatoes soften.
  4. Transfer roasted vegetables to a blender.
  5. Add basil and vegetable broth, blend until smooth.
  6. Pour mixture into a pot and simmer for 10 minutes.
