- 1 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- Place all chopped vegetables on a large baking tray.
- Drizzle olive oil over the vegetables.
- Sprinkle salt, pepper, rosemary, and thyme evenly.
- Toss vegetables to coat them evenly with oil and spices.
- Spread vegetables in a single layer on the tray.
- Roast for 35-40 minutes, stirring halfway, until tender and golden.
- Serve warm.
