Description

Tart rhubarb meets creamy custard over a buttery crust in this easy spring dessert bar recipe that’s perfect for gatherings.


Ingredients

Scale

2 cups all-purpose flour

1/4 cup granulated sugar

1 cup cold butter, cubed

3 large eggs

2 cups granulated sugar

1/2 cup all-purpose flour

1/2 tsp salt

1 cup heavy cream

5 cups rhubarb, diced


Instructions

1. Preheat your oven to 350°F (175°C).

2. In a large bowl, combine 2 cups flour and 1/4 cup sugar. Cut in the cold butter until mixture resembles coarse crumbs.

3. Press into bottom of greased 9×13-inch baking dish.

4. Bake crust for 10 minutes.

5. In another bowl, whisk eggs, 2 cups sugar, 1/2 cup flour, salt, and cream until smooth.

6. Fold in rhubarb.

7. Pour over the warm crust.

8. Bake 40–45 minutes until custard is set and top is golden.

9. Cool completely before slicing.

Notes

If using frozen rhubarb, thaw and drain excess liquid. Dust bars with powdered sugar just before serving for best presentation.
